Units of measurement

We use conventional mass units, i.e. mg or mg/kg of food or food dry matter for the B group vitamins and ascorbic acid, as the active forms of these vitamins occur naturally in foods. Vitamins A and D occur in both provitamin and active forms, and vitamin E occurs in several different forms which have different potencies. International Units (IU) are used to describe the potencies of different vitamin forms or the potential activities of vitamin precursors. Despite being superseded by other units, the IU is still commonly used. The retinol activity equivalent (RAE) measures the potency of the active (or activated) form of vitamin A precursors, and vitamin E activity is quantified by reference to amounts (mg or μg) of RRR-α-tocopherol (AINCN, 1987; NRC, 2000; Blomhoff and Blomhoff, 2006):
